Grandad's Traditional Banana & Chocolate Chip Muffins

So yesterday afternoon, I had a try at baking a traditional recipe of my granddad's (with his supervision to ensure I didn't mess it up!). These are Banana and Chocolate-Chip muffins with a hint of cinnamon (optional!). He made this recipe himself through trial and error and they taste gorgeous, I hope mine were good enough! This recipe should make 12 fairly large muffins and take 20 minutes to bake. This is a very rich muffin recipe so warning...#Calories.

You Will Need:
12oz Self-raising flour
6oz Butter
8oz Caster Sugar
2 Large Eggs
1 Teaspoon Vanilla Essence
1 Teaspoon Cinnamon
2 Ripe Bananas
100g Milk Chocolate Chips

Firstly, preheat the oven to gas mark 6 and begin by placing the butter and sugar in a saucepan over the gas. NOTE: do not place the pan directly on the gas as the sugar will burn and turn brown. Hold the pan directly above the heat as shown on the image above. Do this until the butter has completely melted giving a yellow-golden runny texture.

Now that the texture is runny, add this in a mixing bowl with the flour. Beat two eggs in a separate bowl then add to the mixture. Mix all these ingredients together with an electric whisk. 

Again, in another separate bowl cut up the two bananas into small chunks and begin 'mashing' together until it creates a very un-appetising banana mush haha (this was my least favourite part!) and then add to your mixture and mix in with a wooden spoon. Now add the vanilla essence and the cinnamon to your mixture. The cinnamon is optional, it's not to everyone's taste, so if you prefer to leave it out that's absolutely fine (but it does taste scrummy!). And last but not least, add in the chocolatey chocolate chips!

Now scoop up your mixture and add to your muffin cases.

Finally bake your muffins for 10 minutes, then turn the tray round in the oven for a further 10 minutes of baking. Then you're done! Thank you all for reading and hopefully you'll have a go at these mighty muffins (My granddad would love to see some attempts!)
