Scrummy Halloween Cupcakes | Orange & Cream Cheese Frosting

As it's Halloween tomorrow, I decided it would be a perfect opportunity to attempt some scummy halloween themed cupcakes! The cupcakes are vanilla and orange with a cream cheese frosting, a very simple recipe and tastes delightful (if I must say so myself!). 

You Will Need:

  • 6oz Self-Raising Flour
  • 4oz Butter
  • 4oz Caster Sugar
  • 2 Free Range Eggs
  • 1 Teaspoon Vanilla Extract
  • Orange Food Colouring (Small amount, but entirely your preference on the colour!)
  • Zest of 1 Orange

...And For The Frosting
  • 1 Teaspoon Vanilla Extract
  • 8oz Cream Cheese
  • 4oz Unsalted Butter
  • 20oz Powdered Sugar (Icing Sugar...yes it's a massive quantity and I couldn't believe it either!)

Begin by pre-heating the oven to gas mark 4. This Recipe produces 12 cupcakes approximately so make sure you prepare your muffin cases ready for when your mixture is ready for baking. For this halloween themed recipe I used orange cupcake cases which I bought from a local craft shop. 

Next, grab your BIG mixing bowl and begin by adding the butter and sugar together and mix until smooth. In a separate bowl beat the two eggs together and gradually add the egg mixture into your bowl bit-by-bit mixing in until all the egg has been used. Now begin folding in your flour gradually until all the mixture is combined. Note: If your mixture is too runny at this point add a little more flour and if your mixture is too thick add a little splash of milk. 

For flavouring begin adding the vanilla extract and grated orange zest to the mixture. Once all combined, complete by adding your food colouring. I chose orange food colouring for this recipe to remain in the halloween theme. Unfortunately my cupcakes didn't take to the food colouring I bought as well as I was hoping. I would recommend purchasing a good brand of food colouring to ensure your cupcakes are as bold as you desire!

Now bake in the oven for 20 minutes and leave to cool at room temperature. 


Once, the cupcakes are cooled, you can begin your icing. Using an electric whisk, mix together the cream cheese and unsalted butter in your mixing bowl until you are left with a smooth consistency. Next, slowly add in your powdered sugar mixing until all the quantity is used and the mixture is fairly thick. Note: If your mixture is too runny, add more icing sugar and if too thick add a splash of milk. 

Now prepare your piping bag or spatular and decorate your cupcakes with your cream cheese frosting, along with any other decorations you wish to add to complete the design. 

And there you have it! Halloween themed cupcakes. I have never made this recipe before until today and I am so impressed with how simple they were to make. Sadly, I'm no Mary Berry, so simple recipes make me happy. The only trouble I found was finding decorations for my cupcakes, supermarkets are seriously slacking this year! I found mine at a sugar craft shop in my local town centre, so I would advise finding craft or baking shops rather than spending hours in the supermarket looking!
